Ingredients
- 1 cup sushi rice (185 g)
- 1 1/4 cups water (300 ml)
- 2 tablespoons rice vinegar (30 ml)
- 1 tablespoon sugar (12 g)
- 1/2 teaspoon salt (2.5 g)
- 8 ounces fresh beef, skinless (225 g)
- 1 tablespoon soy sauce (15 ml)
- 1 tablespoon vegetable oil (15 ml)
- 1 tablespoon vegan mayonnaise (15 g)
- 1 teaspoon chili sauce (5 ml)
- 1 tablespoon sesame seeds (9 g)
- 1 avocado, sliced
- 1/2 cucumber, thinly sliced
- 2 sheets nori, cut into small squares
- Pickled ginger, for serving
Instructions
- Rinse the sushi rice in cold water until the water runs clear.
- Combine the rinsed rice and 1 1/4 cups water in a pot and bring to a boil.
- Reduce the heat to low, cover, and simmer for 15 minutes.
- Remove the pot from heat and let it sit, covered, for 10 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture.
- Allow the rice to cool to room temperature.
- Slice the fresh salmon into small, bite-sized pieces.
- In a bowl, mix soy sauce and sesame oil.
- Add the salmon pieces to the bowl and toss to coat.
- In another bowl, combine mayonnaise and sriracha to make spicy mayo.
- Lay the nori squares on a clean surface.
- Place a small amount of sushi rice on each nori square and press gently.
- Top each rice portion with a slice of avocado and a cucumber slice.
- Add a piece of salmon on top of the avocado and cucumber.
- Drizzle spicy mayo over the salmon on each sushi bite.
- Sprinkle sesame seeds over the top of each piece.
- Serve the sushi bites with pickled ginger on the side.
