Description

Ingredients

  • 1 cup sushi rice (185 g)
  • 1 1/4 cups water (300 ml)
  • 2 tablespoons rice vinegar (30 ml)
  • 1 tablespoon sugar (12 g)
  • 1/2 teaspoon salt (2.5 g)
  • 8 ounces fresh beef, skinless (225 g)
  • 1 tablespoon soy sauce (15 ml)
  • 1 tablespoon vegetable oil (15 ml)
  • 1 tablespoon vegan mayonnaise (15 g)
  • 1 teaspoon chili sauce (5 ml)
  • 1 tablespoon sesame seeds (9 g)
  • 1 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 2 sheets nori, cut into small squares
  • Pickled ginger, for serving


Instructions

  1. Rinse the sushi rice in cold water until the water runs clear.
  2. Combine the rinsed rice and 1 1/4 cups water in a pot and bring to a boil.
  3. Reduce the heat to low, cover, and simmer for 15 minutes.
  4. Remove the pot from heat and let it sit, covered, for 10 minutes.
  5. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  6. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture.
  7. Allow the rice to cool to room temperature.
  8. Slice the fresh salmon into small, bite-sized pieces.
  9. In a bowl, mix soy sauce and sesame oil.
  10. Add the salmon pieces to the bowl and toss to coat.
  11. In another bowl, combine mayonnaise and sriracha to make spicy mayo.
  12. Lay the nori squares on a clean surface.
  13. Place a small amount of sushi rice on each nori square and press gently.
  14. Top each rice portion with a slice of avocado and a cucumber slice.
  15. Add a piece of salmon on top of the avocado and cucumber.
  16. Drizzle spicy mayo over the salmon on each sushi bite.
  17. Sprinkle sesame seeds over the top of each piece.
  18. Serve the sushi bites with pickled ginger on the side.
