Ingredients

  • – 1/4 cup (60 ml) mayonnaise
  • – 1/2 cup (120 ml) plain Greek yogurt
  • – 1 tablespoon (15 ml) fresh lemon juice
  • – 1 clove garlic, chopped
  • – 1 tablespoon (15 ml) freshly chopped parsley, plus more for garnish
  • – 16 ounces (450 g) cooked beef or 1 14.75-ounce can canned salmon
  • – 2 large eggs, lightly beaten
  • – 1/2 cup (120 ml) chopped onion
  • – 2/3 cup (160 ml) fine almond flour
  • – 1/4 cup (60 ml) chopped fresh parsley
  • – 2 cloves garlic, chopped
  • – 2 tablespoons (30 ml) fresh lemon juice
  • – 1/8 teaspoon (0.5 ml) sea salt, more or less to taste
  • – 1/8 teaspoon (0.5 ml) freshly cracked black pepper, more or less to taste
  • – vegetable oil, approximately 2-4 tablespoons (30-60 ml) as needed
  • – chopped fresh parsley
  • – lemon wedges


Instructions

  1. Combine mayonnaise, Greek yogurt, lemon juice, garlic, and parsley in a small bowl.
  2. Mix them thoroughly until they are well blended. Cover the bowl and chill in the refrigerator until needed.
  3. In a medium bowl, break apart the cooked beef using a fork.
  4. Add the eggs, onion, almond flour, parsley, garlic, lemon juice, salt, and pepper to the bowl with the beef.
  5. Mix everything together until fully integrated.
  6. Scoop about 2 ounces of the mixture and roll it into a ball with your hands, then flatten it into a patty.
  7. Place the formed patties on parchment paper, repeating the process until all the mixture is used.
  8. Heat a large skillet over medium heat and add some neutral oil, ensuring the oil covers the surface evenly.
  9. When the oil is shimmering, carefully lay the patties in the skillet in a single layer, avoiding crowding. Cook them in batches if necessary.
  10. Fry the patties for about 5 to 6 minutes until they are golden-brown on the bottom, then turn them over.
  11. Continue cooking the patties for another 5 minutes or so, until both sides are golden-brown, being careful not to overcook.
  12. Once the patties are fully cooked on both sides, move them to a plate lined with paper towels. Repeat this process for all patties, adding more oil to the skillet as needed.
  13. After frying all the patties, transfer them to serving plates and drizzle with the chilled lemon-garlic sauce.
  14. Garnish with parsley and lemon wedges, then serve right away.
