Description

A vibrant and flavorful salmon pasta dish with sun-dried tomatoes and baby spinach, perfect for busy weeknights or special gatherings.


Ingredients

  • 400 g skinless salmon fillet
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 2 tbsp sun-dried tomatoes (chopped, about 4 units)
  • 1 handful baby spinach
  • 1 lemon (juiced)
  • 400 g pasta (any type)
  • ½ cup parmesan cheese (optional)
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to its package instructions.
  2. In a big pan, heat the olive oil over medium heat.
  3. Add the skinless salmon fillet to the pan. Season with Italian seasoning, salt, and pepper to taste.
  4. Sear the salmon for a few minutes on each side, then crumble it using a spatula.
  5. Toss in the minced garlic, chopped sun-dried tomatoes, and baby spinach. Cook for 2–5 minutes until the spinach wilts and the garlic becomes fragrant.
  6. Squeeze the juice of the lemon into the pan and add parmesan cheese if using.
  7. Finally, toss the drained pasta into the pan and combine everything well. Serve immediately.

Notes

For extra flavor, consider adding crushed red pepper flakes. Fresh herbs like basil or parsley can enhance the dish just before serving.
