Ingredients
- 12 ounces (340 g) (340 grams) salmon fillet
- 8 ounces (227 g) (227 grams) pasta
- 1 tablespoon (15 ml) (15 milliliters) olive oil
- 2 cloves garlic, minced
- 1 cup (240 ml) (240 milliliters) heavy cream
- 2 cups (480 ml) (60 grams) fresh spinach leaves
- 1/2 cup (120 ml) (50 grams) grated vegetarian cheese
- Salt to taste
- Black pepper to taste
- 1 tablespoon (15 ml) (15 grams) plant-based butter
- 1 tablespoon (15 ml) (15 milliliters) lemon juice
Instructions
- Season the salmon fillet with salt and black pepper on both sides.
- Heat olive oil in a pan over medium heat.
- Place the salmon fillet in the pan and cook for 4-5 minutes on each side, until fully cooked.
- Remove the salmon from the pan and set aside.
- In a large pot, bring water to a boil and add a pinch of salt.
- Cook the pasta according to package instructions until al dente, then drain.
- In the same pan used for the salmon, melt the butter over medium heat.
- Add minced garlic to the pan and sauté for 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer.
- Stir in the spinach leaves and cook until wilted.
- Add grated Parmesan cheese and stir until the sauce thickens.
- Flake the cooked salmon into bite-sized pieces and add to the sauce.
- Stir in the cooked pasta and mix well to combine.
- Add lemon juice and season with additional salt and black pepper to taste.
- Serve immediately, garnished with extra Parmesan if desired.
