Ingredients

  • 12 ounces (340 g) (340 grams) salmon fillet
  • 8 ounces (227 g) (227 grams) pasta
  • 1 tablespoon (15 ml) (15 milliliters) olive oil
  • 2 cloves garlic, minced
  • 1 cup (240 ml) (240 milliliters) heavy cream
  • 2 cups (480 ml) (60 grams) fresh spinach leaves
  • 1/2 cup (120 ml) (50 grams) grated vegetarian cheese
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon (15 ml) (15 grams) plant-based butter
  • 1 tablespoon (15 ml) (15 milliliters) lemon juice


Instructions

  1. Season the salmon fillet with salt and black pepper on both sides.
  2. Heat olive oil in a pan over medium heat.
  3. Place the salmon fillet in the pan and cook for 4-5 minutes on each side, until fully cooked.
  4. Remove the salmon from the pan and set aside.
  5. In a large pot, bring water to a boil and add a pinch of salt.
  6. Cook the pasta according to package instructions until al dente, then drain.
  7. In the same pan used for the salmon, melt the butter over medium heat.
  8. Add minced garlic to the pan and sauté for 1 minute until fragrant.
  9. Pour in the heavy cream and bring to a simmer.
  10. Stir in the spinach leaves and cook until wilted.
  11. Add grated Parmesan cheese and stir until the sauce thickens.
  12. Flake the cooked salmon into bite-sized pieces and add to the sauce.
  13. Stir in the cooked pasta and mix well to combine.
  14. Add lemon juice and season with additional salt and black pepper to taste.
  15. Serve immediately, garnished with extra Parmesan if desired.
