Description

Baking salmon brings a delightful twist to a classic pasta dish, featuring fresh spinach, tomatoes, and creamy herb cheese for a nutritious and comforting meal.


Ingredients

  • 2 pieces salmon
  • 4 cups fresh spinach
  • 3 tomatoes, diced
  • 3/4 cups light herb cream cheese
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Oregano, to taste
  • 1 tbsp olive oil


Instructions

  1. Preheat your oven to 390°F.
  2. Prepare a baking dish with one tablespoon of olive oil to prevent sticking.
  3. Place the salmon pieces skin-side down in the dish.
  4. Season with salt, pepper, garlic powder, and oregano to taste.
  5. In a separate bowl, mix the spinach and diced tomatoes with the herb cream cheese.
  6. Spread the spinach and tomato mixture over the salmon.
