Ingredients
- 4 Salmon fillets
- 1 cup Orzo pasta
- 2 cups Chicken broth or water
- 2 tablespoons Olive oil or butter
- Salt and pepper to taste
- Fresh herbs for garnish (like parsley or dill)
- Lemon wedges for serving
Instructions
- Preheat your skillet over medium-high heat. Add olive oil or butter.
- Season the salmon fillets with salt and pepper.
- Once the oil is hot, place the salmon skin-side down in the pan. Cook for 4-5 minutes without moving it to achieve a crispy skin.
- Carefully flip the salmon and cook for an additional 4-5 minutes or until cooked to your desired doneness. Remove from heat and let rest.
- In a separate pot, bring the chicken broth or water to a boil. Add the orzo, cooking per package instructions until al dente.
- Drain the orzo and toss it with a bit of olive oil or butter. Season with salt and pepper to taste.
- To serve, place the orzo on a plate, top with salmon, and garnish with fresh herbs and lemon wedges.
Notes
Allow salmon to come to room temperature before cooking. Experiment with herbs for enhanced flavor. Store leftovers in an airtight container for up to three days.
