Description

A fresh and elegant dish of raw salmon paired with a zingy citrus soy dressing, highlighting the beauty of simple seafood preparation.


Ingredients

  • 6-8 oz. sushi-grade raw salmon, sliced
  • 1 small shallot, minced finely
  • 2 tbsp high quality extra virgin olive oil
  • ½ lemon, juiced (about 2 tbsp)
  • ½ lime, juiced (about 2 tbsp)
  • 1 tbsp soy sauce (or tamari for gluten-free)


Instructions

  1. Minced shallot finely to enhance flavor balance.
  2. Juice half a lemon and half a lime into a bowl.
  3. If necessary, slice the salmon against the grain into 1/4 inch thick pieces using a sharp knife.
  4. In a mixing bowl, combine the minced shallot, citrus juices, and soy sauce, whisking together until well mixed.
  5. Drizzle 1 tablespoon of olive oil on a serving plate and arrange the salmon slices on top.
  6. Drizzle the remaining olive oil over the salmon.
  7. Pour the citrus dressing around the salmon without drowning it.
  8. Optionally garnish with thinly sliced scallions, chives, or micro-greens, and a sprinkle of flaky salt. Serve chilled.
