Ingredients

  • Beef fillets, 1 pound (454 g) (450 grams)
  • Egg, 1 large
  • Breadcrumbs, 1 cup (240 ml) (120 grams)
  • Green onions, 2, finely chopped
  • Garlic, 2 cloves, minced
  • Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (2.5 grams)
  • Olive oil, 2 tablespoons (30 ml) (30 milliliters)
  • Avocado, 1 large
  • Greek yogurt, 1/2 cup (120 ml) (120 grams)
  • Lime juice, 2 tablespoons (30 ml) (30 milliliters)
  • Cilantro, 1/4 cup (60 ml) (15 grams), chopped
  • Salt, 1/2 teaspoon (3 ml) (2.5 grams)
  • Black pepper, 1/4 teaspoon (1 ml) (1.25 grams)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle 1 tablespoon of olive oil over the salmon fillets.
  4. Bake the salmon in the oven for 12-15 minutes or until fully cooked.
  5. Remove the salmon from the oven and let it cool slightly.
  6. Flake the cooled salmon fillets into a large mixing bowl.
  7. Add the egg, breadcrumbs, green onions, garlic, lemon juice, salt, and black pepper to the bowl.
  8. Mix the ingredients thoroughly until well combined.
  9. Shape the mixture into small balls, about 1 inch in diameter.
  10. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
  11. Fry the salmon balls in batches, turning occasionally, until golden brown on all sides.
  12. Transfer the cooked salmon balls to a plate lined with paper towels to drain excess oil.
  13. To make the sauce, scoop out the avocado flesh into a blender.
  14. Add Greek yogurt, lime juice, cilantro, salt, and black pepper to the blender.
  15. Blend until smooth and creamy.
  16. Serve the salmon balls warm with the creamy avocado sauce on the side.
