Description

A creamy and rich Salmon Alfredo Pasta that combines tender salmon fillets with fettuccine for a comforting meal.


Ingredients

  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 2 salmon fillets, skinless
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
  2. In a large skillet over medium heat, add olive oil. Season the salmon fillets with salt and pepper, then cook in the skillet for 4-5 minutes on each side or until cooked through. Remove from skillet and flake into bite-sized pieces.
  3. In the same skillet, sauté the minced garlic until fragrant. Add the heavy cream and stir to combine. Simmer, then whisk in the Parmesan cheese until the sauce is smooth.
  4. Toss the cooked fettuccine in the sauce, adding reserved pasta water as needed to adjust consistency. Gently fold in the flaked salmon.
  5. Serve on warm plates and garnish with fresh parsley.

Notes

Roasting garlic can enhance flavor; consider using fresh herbs for an aromatic touch. Store leftovers in an airtight container for up to three days.
