Ingredients

- 1 teaspoon (5 ml) lemon zest (2 grams)
- 2 teaspoons (10 ml) fresh sage leaves, chopped (2 grams)
- 1/2 teaspoon (3 ml) salt (3 grams)
- 1/4 teaspoon (1 ml) black pepper (0.5 grams)
- 1 lemon, sliced thinly for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels.
- Place the fillets on a baking sheet lined with parchment paper.
- In a small bowl, combine olive oil, lemon juice, and lemon zest.
- Add the chopped sage, salt, and black pepper to the mixture.
- Stir the mixture until well combined.
- Brush the mixture evenly over each cod fillet.
- Arrange the lemon slices over and around the fillets.
- Roast in the preheated oven for 12-15 minutes.
