Description

A comforting rustic seafood soup that brings the essence of coastal cooking home with rich flavors and fresh ingredients.


Ingredients

  • 1 lb mixed seafood (shrimp, clams, mussels, fish)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups fish stock or vegetable broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Stir in diced tomatoes, fish stock, bay leaf, thyme, salt, and pepper. Bring to a simmer.
  3. Add the mixed seafood to the pot and cook until they are cooked through, about 5-7 minutes.
  4. Taste and adjust seasoning if necessary.
  5. Remove bay leaf before serving.
  6. Garnish with fresh parsley and serve warm.

Notes

For added heat, consider including a pinch of red pepper flakes when sautéing garlic. Serve with crusty bread and lemon wedges.
