Ingredients
- 4 thick slices bread torn into 1-inch pieces
- 2 tablespoon (30 ml) s olive oil plus more for drizzling
- 16 ounce (454 g) s ground beef
- 1 red onion chopped
- 2 cloves garlic minced
- 2 tablespoon (30 ml) s minced fresh thyme or 2 teaspoon (10 ml) s dried
- 1/2 teaspoon (3 ml) red chili flakes optional , or more to taste
- 1 (28-ounce) can diced tomatoes undrained
- 2 (15-ounce) cans white beans rinsed, drained, and divided
- 1 cup (240 ml) water plus more as needed
- Salt and freshly ground black pepper
Instructions
- Position the oven rack to the upper-middle section and preheat the broiler on high. Spread the bread pieces evenly on a baking sheet with edges. Toast under the broiler until golden brown, about 5 minutes, shaking the tray as needed to ensure even browning. Take the bread out of the oven and set it aside.
- While the bread is toasting, warm the olive oil in a Dutch oven or large pot over medium-high heat until it shimmers. Add the ground beef and chopped onion. Cook, stirring from time to time, until the beef is fully cooked and the onions are soft, about 5 to 7 minutes.
- Mix in the minced garlic, thyme, and red chili flakes until they release their aroma. Incorporate the diced tomatoes and one can of white beans into the mixture. Let it come to a boil, then lower the heat and let it simmer without covering, until the mixture thickens and deepens in color, about 10 to 15 minutes.
- Pour in the other can of white beans. If the stew appears too thick, gradually add more water, a quarter cup at a time, until you reach the desired consistency. Stir and heat through, about 3 to 5 minutes.
- Adjust the seasoning with salt and freshly ground black pepper to your liking. Serve each portion with pieces of bread and a drizzle of olive oil on top.
