Description

Ingredients

  • 1 pound fish fillets (cod, haddock, or your choice)
  • 1 cup breadcrumbs
  • 1/2 cup mashed potatoes
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Oil for frying


Instructions

  1. Cook the fish fillets in boiling water until tender, then flake them into a bowl.
  2. Mix in the mashed potatoes, breadcrumbs, parsley, egg, lemon juice, salt, and pepper until well combined.
  3. Shape the mixture into patties.
  4. Heat oil in a frying pan over medium heat.
  5. Fry the fish cakes for about 3-4 minutes on each side or until golden brown.

Notes

Refrigerate formed patties for about 30 minutes before frying for better cohesion. Add more breadcrumbs if the mixture feels too loose.
