Ingredients
- 1 pound fish fillets (cod, haddock, or your choice)
- 1 cup breadcrumbs
- 1/2 cup mashed potatoes
- 1/4 cup chopped parsley
- 1 egg
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Oil for frying
Instructions
- Cook the fish fillets in boiling water until tender, then flake them into a bowl.
- Mix in the mashed potatoes, breadcrumbs, parsley, egg, lemon juice, salt, and pepper until well combined.
- Shape the mixture into patties.
- Heat oil in a frying pan over medium heat.
- Fry the fish cakes for about 3-4 minutes on each side or until golden brown.
- Serve hot with a side of tartar sauce or a fresh salad.
Notes
Refrigerate formed patties for about 30 minutes before frying for better cohesion. Add more breadcrumbs if the mixture feels too loose.
