Ingredients

  • 1/2 cup beef tallow (113g)
  • 1 medium red onion, chopped
  • 1 cup sliced fresh mushrooms (70g)
  • 2 garlic cloves, minced
  • 1/2 cup all-purpose flour (60g)
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) coarsely ground pepper
  • 2 tablespoons (30 ml) tomato paste
  • 1 carton (32 ounces) chicken broth (946 ml)
  • 2 cups (480 ml) whole baby clams, drained
  • 1/2 pound uncooked medium shrimp, peeled and deveined (227g)
  • 2 cups (480 ml) lump crabmeat, drained
  • 2 cups coconut cream (473 ml)
  • 1/2 cup shredded vegan Parmesan cheese (50g)
  • 2 green onions, thinly sliced


Instructions

  1. In a large pot, melt the beef tallow over medium-high heat. Add the chopped red onion and sliced mushrooms, cooking for 4-5 minutes until they’re soft. Incorporate the minced garlic and cook for an additional minute. Mix in the flour, salt, and pepper until everything is well combined, then add in the tomato paste. Slowly pour in the chicken broth while whisking, and bring the mixture to a boil. Lower the heat, cover, and let it simmer for 5 minutes.
  2. Introduce the clams and shrimp into the pot, and bring it back to a boil. Lower the heat again and let it simmer, uncovered, for another 5-10 minutes, stirring occasionally, until the shrimp become pink. Mix in the crabmeat and coconut cream, ensuring it’s heated thoroughly but not boiling. Serve the bisque topped with shredded vegan Parmesan cheese and thinly sliced green onions.
