Ingredients

  • 1 (454 g) salmon fillet
  • 12 sprigs fresh parsley
  • 2 tbsp (30 ml) pure maple syrup
  • 2 tbsp (30 ml) whole-grain Dijon mustard
  • 1 tbsp (15 ml) mayonnaise
  • salt and pepper
  • lemon wedges for serving


Instructions

  1. Set your oven to 325°F and prepare a baking tray with parchment paper.
  2. Place the salmon on the prepared tray and season it with salt and pepper. Use a sharp knife to cut the salmon into serving portions, slicing down to the skin but not all the way through, which will make it easier to serve neatly once cooked.
  3. Hold the parsley by its leaves and cut the stems crosswise until you reach the leaves. Save the leaves for later use as a garnish. In a small bowl, combine the cut stems with the maple syrup, mustard, and mayonnaise, mixing until smooth. Generously spread this sauce over the top of the salmon.
  4. Cook the salmon until the thickest part reaches 125°F, as measured with an instant-read thermometer; this took 25 minutes in my oven. Optionally, sprinkle the chopped parsley leaves over the top for garnish. Serve with lemon wedges on the side.
