Description

A refreshing crab pasta salad combines simple ingredients, perfect for summer gatherings, picnics, and barbecues.

Ingredients

  • 8 ounces Medium Shells Pasta (or Orecchiette)
  • 8 ounces Imitation Crab Meat (or Real Crab)
  • 1 cup Frozen Peas (thawed)
  • 1/2 cup Red Onion (peeled and chopped)
  • 1 cup Celery (chopped)
  • 1 cup Red Bell Pepper (seeded and chopped)
  • 1 cup Mayonnaise (or Greek Yogurt)
  • 1 tablespoon Fresh Dill (chopped)
  • Salt & Pepper to taste
  • 2 tablespoons Fresh Chives (for garnish)

Instructions

  1. Begin by cooking the medium shells pasta according to package instructions until al dente. Drain and let it cool.
  2. While the pasta cools, chop the red onion, celery, and red bell pepper into small, uniform pieces.
  3. In a large bowl, combine the cooled pasta, imitation crab meat, thawed peas, chopped vegetables, mayonnaise, fresh dill, salt, and pepper. Stir until everything is well mixed.
  4. Adjust the seasoning according to personal taste. If you want a lighter option, consider substituting Greek yogurt for mayonnaise.
  5. Garnish with freshly chopped chives for a pop of color and flavor.
  6. Refrigerate the salad for at least 30 minutes to allow the flavors to meld together before serving.

Notes

Consider using real crab for a richer flavor, and feel free to add a squeeze of lemon juice for brightness.
