Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup sugar snap peas, trimmed
- 1 lemon, juiced
- 2 teaspoons dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add garlic and sauté for about 1 minute, until fragrant.
- Toss in the diced red bell pepper and snap peas. Sauté for 3-4 minutes until the vegetables begin to soften.
- Add the shrimp, lemon juice, oregano, salt, and pepper to the skillet. Stir well to combine.
