Description

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup sugar snap peas, trimmed
  • 1 lemon, juiced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add garlic and sauté for about 1 minute, until fragrant.
  3. Toss in the diced red bell pepper and snap peas. Sauté for 3-4 minutes until the vegetables begin to soften.
  4. Add the shrimp, lemon juice, oregano, salt, and pepper to the skillet. Stir well to combine.
  5. Cook the shrimp for about 4-5 minutes, or until they turn pink and opaque, stirring occasionally.
  6. Remove from heat and garnish with fresh parsley before serving.
