A simple yet flavorful seafood dish featuring tilapia fillets in a robust roasted pepper sauce, perfect for quick weeknight dinners.
Ingredients
- 4 tilapia fillets
- 2 red bell peppers
- 1 yellow bell pepper
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the red and yellow bell peppers in half and remove the seeds. Place them on a baking sheet, cut-side down.
- Drizzle olive oil over the peppers. Roast in the preheated oven for about 20-25 minutes, until the skins are blistered.
- Transfer the peppers to a bowl and cover with plastic wrap to steam for about 10 minutes.
- Peel the skins off the peppers, then blend them together with garlic until smooth.
- Heat a large skillet over medium heat and add a splash of olive oil.
- Season the tilapia fillets with salt and pepper. Add the fillets to the skillet, cooking for 3-4 minutes on each side until golden brown and cooked through.
- Pour the roasted pepper sauce over the tilapia fillets and simmer for another 2-3 minutes.
- Serve hot, garnished with fresh parsley.
