Description

A simple yet flavorful seafood dish featuring tilapia fillets in a robust roasted pepper sauce, perfect for quick weeknight dinners.


Ingredients

  • 4 tilapia fillets
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the red and yellow bell peppers in half and remove the seeds. Place them on a baking sheet, cut-side down.
  3. Drizzle olive oil over the peppers. Roast in the preheated oven for about 20-25 minutes, until the skins are blistered.
  4. Transfer the peppers to a bowl and cover with plastic wrap to steam for about 10 minutes.
  5. Peel the skins off the peppers, then blend them together with garlic until smooth.
  6. Heat a large skillet over medium heat and add a splash of olive oil.
  7. Season the tilapia fillets with salt and pepper. Add the fillets to the skillet, cooking for 3-4 minutes on each side until golden brown and cooked through.
  8. Pour the roasted pepper sauce over the tilapia fillets and simmer for another 2-3 minutes.
  9. Serve hot, garnished with fresh parsley.
