Description

A vibrant and flavorful salmon dish featuring juicy cherry tomatoes and zesty lemon, perfect for busy weeknights or a leisurely dinner.


Ingredients

  • 2 salmon fillets
  • 1 cup cherry tomatoes, halved
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a pan, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add cherry tomatoes and cook until they soften, about 3-4 minutes.
  4. Squeeze lemon juice into the pan, stir, and season with salt and pepper.
  5. Push the tomatoes to the side and place the salmon fillets in the pan.
  6. Cook for about 5-6 minutes on each side, or until salmon is cooked through and flaky.
  7. Serve warm, garnished with fresh parsley.

Notes

For a little heat, add red pepper flakes to the garlic. Store leftovers in an airtight container for up to two days.
