Ingredients
- 2 salmon fillets
- 1 cup cherry tomatoes, halved
- 1 lemon, juiced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a pan, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until they soften, about 3-4 minutes.
- Squeeze lemon juice into the pan, stir, and season with salt and pepper.
- Push the tomatoes to the side and place the salmon fillets in the pan.
- Cook for about 5-6 minutes on each side, or until salmon is cooked through and flaky.
- Serve warm, garnished with fresh parsley.
Notes
For a little heat, add red pepper flakes to the garlic. Store leftovers in an airtight container for up to two days.
