Ingredients

  • 1 tsp brown sugar (5 ml)
  • 3 tbsp soy sauce (45 ml)
  • 1 tbsp vegetable oil (15 ml)
  • 2/3 cup diced red onion (160 g)
  • 2/3 cup diced red bell pepper (80 g)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 3 eggs, well beaten
  • 4 cups day old cooked white rice (from about 2 cups of raw rice) (760 g)
  • 1 cup frozen peas, thawed (150 g)
  • 2 cups (480 ml) cooked beef in large chunks
  • 2 green onions, thinly sliced, including the greens
  • Cilantro (or parsley) for garnish


Instructions

  1. Combine the brown sugar with the soy sauce: In a small bowl, dissolve the brown sugar in the soy sauce and set it aside.
  2. Cook the onion, bell pepper, garlic, and ginger: Warm up the vegetable oil in a large frying pan or wok over medium-high heat. Add the diced red onion and bell pepper, cooking until they are lightly browned, around 5 minutes. Reduce the heat to medium, then incorporate the garlic and grated ginger. Continue cooking for an additional minute.
  3. Incorporate the eggs, followed by the rice: Pour in the beaten eggs and stir until they are just set. Add the cooked rice and turn the heat back to medium-high. Cook for a few more minutes, stirring frequently.
