Ingredients
- – 4 salmon fillets, about 113 g each (4 oz)
- – 80 ml canned pumpkin or homemade pumpkin puree
- – 3 Tablespoons (45 ml) brown sugar or coconut sugar + extra for sprinkling
- – 1 teaspoon (5 ml) pumpkin pie spice
- – 1/2 teaspoon (3 ml) apple cider vinegar
- – 1/4 teaspoon (1 ml) sea salt
- – 1/4 – 1/3 cup (80 ml) roasted and salted pepitas, crushed a little
Instructions
- Set your oven to 400°F and position the rack in the middle.
- In a small saucepan, combine the pumpkin, sugar, pumpkin pie spice, apple cider vinegar, and sea salt over low heat, stirring until the sugar is fully dissolved and the mixture slightly thickens.
- Place the salmon fillets, skin side down, in a single layer in a baking dish. Evenly coat the fish with the pumpkin mixture. Sprinkle a portion of the crushed pepitas over each piece of salmon.
- Cook the salmon until it is firm yet still a vivid pink inside, roughly 15 to 20 minutes.
- Finish by adding an extra dash of brown sugar on top before serving.
