Ingredients

  • – 4 salmon fillets, about 113 g each (4 oz)
  • – 80 ml canned pumpkin or homemade pumpkin puree
  • – 3 Tablespoons (45 ml) brown sugar or coconut sugar + extra for sprinkling
  • – 1 teaspoon (5 ml) pumpkin pie spice
  • – 1/2 teaspoon (3 ml) apple cider vinegar
  • – 1/4 teaspoon (1 ml) sea salt
  • – 1/4 – 1/3 cup (80 ml) roasted and salted pepitas, crushed a little


Instructions

  1. Set your oven to 400°F and position the rack in the middle.
  2. In a small saucepan, combine the pumpkin, sugar, pumpkin pie spice, apple cider vinegar, and sea salt over low heat, stirring until the sugar is fully dissolved and the mixture slightly thickens.
  3. Place the salmon fillets, skin side down, in a single layer in a baking dish. Evenly coat the fish with the pumpkin mixture. Sprinkle a portion of the crushed pepitas over each piece of salmon.
  4. Cook the salmon until it is firm yet still a vivid pink inside, roughly 15 to 20 minutes.
  5. Finish by adding an extra dash of brown sugar on top before serving.
