Ingredients

  • 12 ounces (340 g) salmon fillets (340 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • Salt, to taste
  • Black pepper, to taste
  • 8 ounces (227 g) fettuccine pasta (227 grams)
  • 1 cup (240 ml) pumpkin puree (240 milliliters)
  • 1 cup (240 ml) heavy cream (240 milliliters)
  • 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) fresh sage, finely chopped (about 6 grams)
  • 1/4 teaspoon (1 ml) ground nutmeg (1 gram)
  • 1/2 cup (120 ml) beef broth (120 milliliters)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • Fresh parsley, for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the salmon fillets with salt and black pepper.
  3. Heat 1 tablespoon of olive oil in an oven-safe skillet over medium heat.
  4. Sear the salmon fillets in the skillet for 2-3 minutes on each side, until golden brown.
  5. Transfer the skillet to the oven and bake the salmon for 10-12 minutes, until cooked through.
  6. While the salmon is baking, bring a large pot of salted water to a boil.
  7. Cook the fettuccine pasta according to package instructions, then drain and set aside.
  8. In a large pan, heat the remaining 1 tablespoon of olive oil over medium heat.
  9. Add the minced garlic and sauté for 1 minute until fragrant.
  10. Stir in the pumpkin puree, heavy cream, and chicken broth.
  11. Add the grated Parmesan cheese, chopped fresh sage, and ground nutmeg to the mixture.
  12. Stir well and let the sauce simmer for 5-7 minutes, until slightly thickened.
  13. Add the cooked fettuccine to the sauce and toss to coat the pasta evenly.
  14. Stir in the lemon juice and adjust seasoning with salt and black pepper, if needed.
