Ingredients
- 3 garlic cloves, peeled and finely diced
- 1 spring onion, finely diced
- small piece of ginger, peeled and finely grated
- 500 g (1 lb 2 oz) raw shrimp, peeled and deveined
- 1 egg
- 1 tbsp (15 ml) light soy sauce
- 1/4 tsp (1 ml) seasoning (or “yumyum” seasoning)
- 4 slices of white tin loaf bread
- 150 g (5 oz) white sesame seeds
- vegetable oil for frying
- chilli sauce of your choice, for serving
Instructions
- Place the peeled shrimp, egg, grated ginger, chopped garlic, chopped spring onion, soy sauce, and seasoning into a blender. Blend until you achieve a smooth mixture without large pieces.
- Use a round cutter to create four circles from each slice of bread, keeping the leftover pieces for future breadcrumb use.
- Distribute the sesame seeds evenly on a flat surface.
- Apply 1 to 1½ tablespoons of the shrimp paste onto one side of each bread circle, making sure it’s completely covered.
- Firmly press the shrimp-covered side of the bread into the sesame seeds to ensure even coating.
- Warm oil in a deep pan or fryer to 180°C (350°F). Gently place the bread, shrimp side down, into the hot oil for 3–4 minutes, then turn over and cook the other side for an additional 2 minutes until it turns golden brown.
- Lift the toast from the oil and set it on a cooling rack to let any extra oil drip off.
- Serve right away while still hot, along with your preferred chilli sauce.
