Ingredients
- 1 pound shrimp, peeled and deveined
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup parsley, chopped
- 1/2 cup heavy cream
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup breadcrumbs
- 1 cup all-purpose flour
- 2 eggs, beaten
- Oil for frying
Instructions
- In a skillet, sauté onions and garlic until translucent.
- Add the shrimp and cook until pink.
- Stir in the parsley, heavy cream, paprika, salt, and pepper.
- Remove from heat and let cool.
- Once cooled, form the mixture into small balls.
- Dredge each ball in flour, dip in beaten eggs, and roll in breadcrumbs.
- Heat oil in a deep fryer or large pot.
- Fry the croquettes in batches until golden brown.
- Drain on paper towels and serve hot.
Notes
Ensure the oil is at the right temperature for frying to achieve a perfect crunch. Consider serving with a zesty dipping sauce like aioli.
