Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 4 cups fish stock
- 1 pound white fish (like cod or haddock), cut into pieces
- 8 shrimp, deveined
- 1/2 pound mussels, cleaned
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and red bell pepper, sautéing until soft.
- Stir in the tomatoes, cooking for another 2-3 minutes.
- Pour in the fish stock, bringing it to a boil.
- Add the white fish, cooking until it starts to flake.
- Introduce the shrimp and mussels, cooking until the shrimp turns pink and the mussels have opened.
- Season the soup with smoked paprika, salt, and pepper.
- Serve hot, garnished with fresh parsley.
