Description

A comforting Portuguese fish stew with white fish, chorizo, and fresh vegetables, perfect for warming the soul on chilly days.

Ingredients

  • 1 lb white fish (such as cod or haddock)
  • 1/2 lb chorizo, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 4 cups fish stock or water
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil
  • Crusty bread for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chorizo and cook until browned.
  2. Add onion, garlic, and bell pepper, sauté until softened.
  3. Stir in tomatoes, paprika, and thyme; cook for a few minutes.
  4. Pour in the fish stock or water; bring to a simmer.
  5. Add the fish and season with salt and pepper. Simmer until the fish is cooked through, about 10-15 minutes.
  6. Serve the stew hot with crusty bread for dipping.

Notes

For a thicker stew, let it reduce further. Adjust seasoning to taste.
