Description

A delightful cod recipe known as ‘poor man’s lobster’, featuring a sweet brine and rich butter, broiled to perfection.


Ingredients

  • 4 boneless cod filets (5-8oz)
  • 4 cups water
  • 3/4 cup sugar
  • 1 1/2 tbsp salt
  • 6 tbsp butter (divided)
  • 1/2 lemon
  • 1 tsp paprika


Instructions

  1. Preheat your broiler.
  2. In a bowl, mix together the water, sugar, and salt, then add to a large skillet.
  3. Place fish filets in the skillet and bring to a boil over medium-high heat.
  4. Boil for 3 to 5 minutes, depending on the thickness of the cod fillet.
  5. Remove fish from water and place on lined pan.
  6. Brush with melted butter and season with paprika.
  7. Broil for about 7 minutes on low until fish flakes easily with a fork.
  8. Brush with more butter and juice from 1/2 lemon and serve.

Notes

Keep a meat thermometer handy to check the internal temperature, which should reach 145°F for safe consumption.
