Description
A delightful dish that combines savory rice, sweet pineapple, and vibrant vegetables, perfect for quick weeknight dinners or impressing guests.
Ingredients
- 3 cups cooked day-old jasmine rice
- 1 to 1½ cups pineapple chunks
- ½ cup diced onion
- 3 cloves garlic, minced
- 1 cup total peas and carrots
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 teaspoon fish sauce
- ⅓ cup cashews or peanuts (optional)
- 2 tablespoons oil
Instructions
- In a hot skillet or wok, sauté garlic and onions in oil until fragrant.
- Add peas and pineapple chunks. Let the pineapple brown a bit for extra flavor.
- Push everything to the side, scramble your eggs, then stir it all together.
- Add cold, day-old rice and pour in soy sauce and fish sauce. Stir-fry until everything is coated and warmed through.
- Sprinkle with green onions (optional), add cashews or peanuts if desired, and serve with lime wedges.
Notes
Day-old rice works best for a drier texture. Serve in hollowed-out pineapple halves for a stunning presentation.
