Description

A delightful dish that combines savory rice, sweet pineapple, and vibrant vegetables, perfect for quick weeknight dinners or impressing guests.


Ingredients

  • 3 cups cooked day-old jasmine rice
  • 1 to cups pineapple chunks
  • ½ cup diced onion
  • 3 cloves garlic, minced
  • 1 cup total peas and carrots
  • 2 large eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 teaspoon fish sauce
  • ⅓ cup cashews or peanuts (optional)
  • 2 tablespoons oil


Instructions

  1. In a hot skillet or wok, sauté garlic and onions in oil until fragrant.
  2. Add peas and pineapple chunks. Let the pineapple brown a bit for extra flavor.
  3. Push everything to the side, scramble your eggs, then stir it all together.
  4. Add cold, day-old rice and pour in soy sauce and fish sauce. Stir-fry until everything is coated and warmed through.
  5. Sprinkle with green onions (optional), add cashews or peanuts if desired, and serve with lime wedges.

Notes

Day-old rice works best for a drier texture. Serve in hollowed-out pineapple halves for a stunning presentation.
