Description

A deliciously simple recipe for salmon topped with homemade pesto, breadcrumbs, and parmesan cheese, baked to perfection.


Ingredients

  • 24 ounces salmon fillets (four 6-ounce fillets, skin-on or skinless)
  • 6-7 tablespoons basil pesto
  • ⅓ cup fresh breadcrumbs
  • ⅓ cup freshly grated parmesan cheese


Instructions

  1. Preheat the oven to 400°F.
  2. Prepare a rimmed baking sheet by lining it with tin foil and spraying it with vegetable spray.
  3. Lay the salmon fillets on the baking sheet, ensuring they don’t touch each other.
  4. Spoon 1½ tablespoons of basil pesto over each fillet, spreading it evenly.
  5. In a small bowl, combine the breadcrumbs and grated parmesan cheese.
  6. Generously top the salmon fillets with the breadcrumb mixture.
  7. Bake for 12 minutes for medium doneness or up to 15 minutes to fully cook the salmon.

Notes

Consider adding garlic to the breadcrumb mixture for extra flavor, and use panko breadcrumbs for an even crispier topping.
