Savor succulent grilled shrimp marinated in aromatic basil pesto, garlic, and zesty lemon for a delightful summer dish.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup basil pesto, store-bought or homemade
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Salt and black pepper to taste
- Fresh basil leaves (for garnish)
- Lemon wedges (for serving)
Instructions
- In a bowl, combine the shrimp, olive oil, minced garlic, lemon juice, salt, and black pepper. Toss to coat and let marinate for 15 minutes.
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 15 minutes.
- Thread the marinated shrimp onto skewers, securing them through the tail and head.
- Grill the shrimp skewers for 2-3 minutes on each side until they turn pink and opaque, basting with remaining marinade.
- During the last few minutes of grilling, brush the shrimp generously with basil pesto.
- Remove from the grill, garnish with fresh basil leaves, and serve with lemon wedges.
Notes
For a spicier kick, consider adding a pinch of red pepper flakes to the marinade.
