Description

Savor succulent grilled shrimp marinated in aromatic basil pesto, garlic, and zesty lemon for a delightful summer dish.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup basil pesto, store-bought or homemade
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Fresh basil leaves (for garnish)
  • Lemon wedges (for serving)


Instructions

  1. In a bowl, combine the shrimp, olive oil, minced garlic, lemon juice, salt, and black pepper. Toss to coat and let marinate for 15 minutes.
  2. Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 15 minutes.
  3. Thread the marinated shrimp onto skewers, securing them through the tail and head.
  4. Grill the shrimp skewers for 2-3 minutes on each side until they turn pink and opaque, basting with remaining marinade.
  5. During the last few minutes of grilling, brush the shrimp generously with basil pesto.
  6. Remove from the grill, garnish with fresh basil leaves, and serve with lemon wedges.

Notes

For a spicier kick, consider adding a pinch of red pepper flakes to the marinade.
