Delight in crispy fried cod with a golden crust and tender fish, perfect for summer gatherings.
Ingredients
- 1 1/4 pounds of cod fillets, cut into strips or bite-sized pieces
- 1/2 cup of flour for dredging
- 2 eggs, beaten for dipping
- 1 cup of panko bread crumbs
- 3/4 teaspoon of salt
- 1/2 teaspoon of granulated garlic for seasoning
- Oil for frying, enough to fill a large pot with 1-2 inches
Instructions
- Preheat the oven to the warm setting (around 170 degrees).
- Prepare a cooling rack by placing it on top of a baking sheet, setting it aside for later.
- Set up an assembly line: place the flour on one plate, pour the beaten eggs into a bowl, and mix panko bread crumbs, salt, and garlic on another plate.
- Begin coating the fish. Dredge each piece in flour, dip it into the egg, and press into the panko mixture to coat thoroughly.
- In a large pot, heat 1-2 inches of oil to 350 degrees. Fry the fish in small batches until golden brown, approximately 2-4 minutes per side.
- Transfer the fried fish to the cooling rack in the oven to keep warm while frying the remaining pieces.
- Serve immediately, enjoying the crispiness and flavor of the fried cod.
Notes
For enhanced flavor, pair with fresh lemon wedges and consider adding paprika or cayenne for a twist.
