Description

Delight in crispy fried cod with a golden crust and tender fish, perfect for summer gatherings.


Ingredients

  • 1 1/4 pounds of cod fillets, cut into strips or bite-sized pieces
  • 1/2 cup of flour for dredging
  • 2 eggs, beaten for dipping
  • 1 cup of panko bread crumbs
  • 3/4 teaspoon of salt
  • 1/2 teaspoon of granulated garlic for seasoning
  • Oil for frying, enough to fill a large pot with 1-2 inches


Instructions

  1. Preheat the oven to the warm setting (around 170 degrees).
  2. Prepare a cooling rack by placing it on top of a baking sheet, setting it aside for later.
  3. Set up an assembly line: place the flour on one plate, pour the beaten eggs into a bowl, and mix panko bread crumbs, salt, and garlic on another plate.
  4. Begin coating the fish. Dredge each piece in flour, dip it into the egg, and press into the panko mixture to coat thoroughly.
  5. In a large pot, heat 1-2 inches of oil to 350 degrees. Fry the fish in small batches until golden brown, approximately 2-4 minutes per side.
  6. Transfer the fried fish to the cooling rack in the oven to keep warm while frying the remaining pieces.
  7. Serve immediately, enjoying the crispiness and flavor of the fried cod.

Notes

For enhanced flavor, pair with fresh lemon wedges and consider adding paprika or cayenne for a twist.
