Ingredients

  • 2 lb (900 g) Salmon fillet
  • 1 1/2 tbsp (22.5 ml) Olive oil
  • 1 tbsp (15 ml) Lemon juice
  • 1/2 tsp (2.5 ml) Sea salt
  • 1/2 tsp (2.5 ml) Black pepper
  • 1/2 cup (120 g) Grated cheese
  • 2 tbsp (30 ml) Fresh parsley (chopped)
  • 2 tbsp (30 ml) Fresh dill (chopped)
  • 1 tsp (5 ml) Garlic powder
  • 1 tbsp (15 ml) Unsalted butter (melted)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillet on a baking sheet lined with parchment paper.
  3. In a small bowl, combine olive oil and lemon juice, then drizzle the mixture over the salmon.
  4. Season the fish evenly with sea salt and black pepper.
  5. In another bowl, mix together the grated cheese, chopped parsley, chopped dill, garlic powder, and melted butter.
  6. Spread the cheese mixture over the top of the salmon, pressing it down gently to adhere.
  7. Bake the salmon in the preheated oven for 15 to 20 minutes or until the fish is cooked through and the crust is golden brown.
  8. Once done, take the salmon out of the oven and let it cool for a few minutes before serving.

Notes

  • For a more flavorful crust, experiment with a mix of Parmesan, cheddar, and Gruyere cheeses.
  • Add a touch of red pepper flakes to the cheese blend for a subtle kick of spice.
  • Enhance the texture by sprinkling breadcrumbs over the cheese before baking, and top with fresh basil or thyme for extra flavor.
