Description

Ingredients

  • 24 ounces (680 g) cod fillets (4 – 6 oz portions)
  • 2 ounces (57 g) feta cheese, shredded
  • 4 cloves garlic, finely chopped
  • 2 tablespoons (30 ml) parsley, fresh, chopped
  • 2 tablespoons (30 ml) lime juice, juice from 1 lime
  • 2 tablespoons (30 ml) vegetable oil
  • 1 tablespoon (15 ml) lime zest
  • 1 tablespoon (15 ml) ground black pepper
  • 2 teaspoons (10 ml) paprika
  • 1/2 tablespoon (8 ml) thyme
  • 1/2 tablespoon (8 ml) salt


Instructions

  1. Heat your oven to 400°F, 200°C, or gas mark 6.
  2. In a shallow dish or on a flat surface, blend the feta cheese, garlic, salt, black pepper, thyme, paprika, parsley, and lime zest until they are well mixed.
  3. On a separate surface, coat all the cod fillets with vegetable oil. Then, individually press each fillet into the cheese mixture, ensuring all sides are covered, and arrange them on a baking sheet lined with parchment paper.
  4. Cook in the oven for 5 to 10 minutes, depending on the thickness of the cod, as it cooks quickly and can dry out.
  5. Drizzle lime juice over the cooked cod and serve with your preferred accompaniments.
