Description

Delicious walleye fillets baked with a crispy Parmesan crust for a satisfying meal.


Ingredients

  • 1 lb walleye (2 fillets)
  • 1/4 cup panko breadcrumbs
  • 1/4 cup Parmesan, finely grated
  • 1 egg
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 lemon


Instructions

  1. Preheat the oven to 400°F and line a baking tray with foil, spraying it with non-stick cooking oil or butter.
  2. In a shallow bowl, crack and whisk the egg until well blended.
  3. In a separate bowl, combine grated Parmesan, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper, and stir to mix.
  4. Pat the walleye fillets dry, dip one fillet into the egg, and then coat with the breadcrumb mixture.
  5. Place the coated fillet on the prepared baking sheet and repeat for the second fillet.
  6. Sprinkle any remaining breadcrumb mixture over the fillets.
  7. Bake in the oven for 15 minutes, until fish is white and flaky inside, and golden brown on the outside.
  8. Drizzle fresh lemon juice over the fish before serving.

Notes

For an extra crunchy texture, consider broiling the fish for the last few minutes of cooking.
