Ingredients
- 1 pound (454 g) shrimp, peeled and deveined (450 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 1 teaspoon (5 ml) smoked paprika (2.5 grams)
- 1/2 teaspoon (3 ml) ground cumin (1 gram)
- 1/4 teaspoon (1 ml) cayenne pepper (0.5 gram)
- Salt, to taste
- Black pepper, to taste
- 1 can chickpeas, drained and rinsed (15 ounces (425 g) / 425 grams)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes (14.5 ounces (411 g) / 411 grams)
- 1/2 cup (120 ml) vegetable broth (120 milliliters)
- 2 tablespoons (30 ml) chopped fresh parsley (30 milliliters)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add shrimp to the skillet.
- Season shrimp with smoked paprika, ground cumin, cayenne pepper, salt, and black pepper.
- Cook shrimp for 2-3 minutes on each side until pink and cooked through.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and chopped bell pepper, cooking for another 2 minutes.
- Add the can of diced tomatoes to the skillet, stirring to combine.
- Pour in the chicken or vegetable broth, mixing well.
- Add drained and rinsed chickpeas to the skillet.
- Season with salt and black pepper to taste.
- Bring the mixture to a simmer and cook for 5-7 minutes.
- Return the cooked shrimp to the skillet, stirring to combine with the chickpeas and sauce.
- Cook for an additional 2-3 minutes to heat the shrimp through.
- Remove from heat and sprinkle chopped fresh parsley over the top.
- Serve immediately.
