Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 1 teaspoon (5 ml) smoked paprika (2.5 grams)
  • 1/2 teaspoon (3 ml) ground cumin (1 gram)
  • 1/4 teaspoon (1 ml) cayenne pepper (0.5 gram)
  • Salt, to taste
  • Black pepper, to taste
  • 1 can chickpeas, drained and rinsed (15 ounces (425 g) / 425 grams)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 ounces (411 g) / 411 grams)
  • 1/2 cup (120 ml) vegetable broth (120 milliliters)
  • 2 tablespoons (30 ml) chopped fresh parsley (30 milliliters)


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add shrimp to the skillet.
  3. Season shrimp with smoked paprika, ground cumin, cayenne pepper, salt, and black pepper.
  4. Cook shrimp for 2-3 minutes on each side until pink and cooked through.
  5. Remove shrimp from the skillet and set aside.
  6. In the same skillet, add the remaining 1 tablespoon of olive oil.
  7. Add chopped onion and sauté until translucent, about 3-4 minutes.
  8. Stir in minced garlic and chopped bell pepper, cooking for another 2 minutes.
  9. Add the can of diced tomatoes to the skillet, stirring to combine.
  10. Pour in the chicken or vegetable broth, mixing well.
  11. Add drained and rinsed chickpeas to the skillet.
  12. Season with salt and black pepper to taste.
  13. Bring the mixture to a simmer and cook for 5-7 minutes.
  14. Return the cooked shrimp to the skillet, stirring to combine with the chickpeas and sauce.
  15. Cook for an additional 2-3 minutes to heat the shrimp through.
  16. Remove from heat and sprinkle chopped fresh parsley over the top.
  17. Serve immediately.
