Ingredients

  • 4 cod fillets (about 170 g each)
  • 15 ml vegetable oil
  • 5 g salt
  • 1 g black pepper
  • 28 g beef butter
  • 3 garlic cloves, minced
  • 1 can crushed tomatoes (400 g)
  • 2 g sugar
  • 5 g red pepper flakes
  • 10 g fresh basil leaves, chopped
  • Juice of 1 lemon


Instructions

  1. Pat the cod fillets dry with paper towels.
  2. Season the fillets with salt and black pepper on both sides.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Add the cod fillets to the skillet, skin side down.
  5. Cook the fillets for 3-4 minutes without moving them.
  6. Flip the fillets and cook for another 3-4 minutes until opaque and cooked through.
  7. Remove the cod from the skillet and set aside.
  8. Reduce the heat to medium and add the butter to the same skillet.
  9. Once the butter is melted, add the minced garlic and sauté for 1 minute.
  10. Pour in the crushed tomatoes and stir to combine.
  11. Add the sugar and red pepper flakes to the tomato sauce.
  12. Simmer the sauce for 5-7 minutes, stirring occasionally.
  13. Stir in the chopped fresh basil and lemon juice.
  14. Return the cod fillets to the skillet, nestling them in the sauce.
  15. Spoon some sauce over the fillets and cook for 1-2 minutes to heat through.
  16. Serve the pan-seared cod with tomato basil sauce immediately.
