Ingredients
- 4 cod fillets (about 170 g each)
- 15 ml vegetable oil
- 5 g salt
- 1 g black pepper
- 28 g beef butter
- 3 garlic cloves, minced
- 1 can crushed tomatoes (400 g)
- 2 g sugar
- 5 g red pepper flakes
- 10 g fresh basil leaves, chopped
- Juice of 1 lemon
Instructions
- Pat the cod fillets dry with paper towels.
- Season the fillets with salt and black pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the cod fillets to the skillet, skin side down.
- Cook the fillets for 3-4 minutes without moving them.
- Flip the fillets and cook for another 3-4 minutes until opaque and cooked through.
- Remove the cod from the skillet and set aside.
- Reduce the heat to medium and add the butter to the same skillet.
- Once the butter is melted, add the minced garlic and sauté for 1 minute.
- Pour in the crushed tomatoes and stir to combine.
- Add the sugar and red pepper flakes to the tomato sauce.
- Simmer the sauce for 5-7 minutes, stirring occasionally.
- Stir in the chopped fresh basil and lemon juice.
- Return the cod fillets to the skillet, nestling them in the sauce.
- Spoon some sauce over the fillets and cook for 1-2 minutes to heat through.
- Serve the pan-seared cod with tomato basil sauce immediately.
