Ingredients
- – 16 whole live oysters (16 oysters)
- – 2 cloves garlic, finely minced (2 cloves garlic)
- – 3 tablespoons vegetable oil (45 ml)
- – 3 tablespoons unsalted butter (42 g)
- – 1 teaspoon lemon juice (5 ml)
- – 1/2 teaspoon (3 ml) chili pepper flakes (or substitute with dashes of Tabasco)
- – 1/4 teaspoon salt (1.5 g)
- – cracked black pepper to taste
- – 1 tablespoon (15 ml) finely minced parsley (1 tablespoon (15 ml) parsley)
Instructions
- Place a small saucepan on the stove and heat over medium-low.
- Once warm, add the vegetable oil and unsalted butter.
- Incorporate the minced garlic and cook until you can smell its aroma, roughly 30 seconds.
- Stir in the lemon juice, chili flakes, salt, cracked black pepper, and minced parsley.
- Turn off the heat.
- For those skilled in shucking: Open the oysters and drizzle a little of the sauce into each.
- Arrange the oysters on a very hot, preheated grill, cover them, and let cook for about 5 to 6 minutes or until the edges begin to curl.
- If not shucking: Set the oysters, with the cup side facing up, on a very hot, preheated grill, cover, and cook for 1 minute.
- The shells should start to open slightly.
- Quickly take the oysters off the grill.
- Using an oven mitt for safety, hold an oyster and use a shucking knife (or a clean screwdriver) to pry it open—it should open easily.
- Pour some sauce into each oyster and place them back on the grill.
- Cover and continue grilling for another 4 to 5 minutes.
