  • 1 pint fresh oysters, drained with their juice reserved
  • 2 cups heavy cream
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1 clove garlic, minced
  • 1 ½ cups chicken or seafood broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Crumbled oyster crackers or crusty bread (for serving)


Instructions

  1. Prepare the Ingredients: Drain oysters and reserve their juice. Finely chop onion and celery. Mince garlic.
  2. Cook the Vegetables: In a medium pot, melt butter over medium heat. Add onions, celery, and garlic. Sauté until the onion is translucent, stirring occasionally.
  3. Make the Broth: Pour in the reserved oyster juice and broth. Stir in Worcestershire sauce and hot sauce if desired. Allow to simmer for about 5 minutes, letting the flavors meld.
  4. Finish the Stew: Add the heavy cream and oysters. Simmer on low heat for an additional 5-10 minutes until the oysters are cooked through. Adjust seasoning with salt and pepper to taste.
  5. Serve: Ladle the stew into bowls, garnishing with fresh parsley. Accompany with crumbled oyster crackers or warm crusty bread for a fulfilling meal.
