  • 2 cups heavy cream
  • 2 tablespoons unsalted butter

  • 1 ½ cups chicken or seafood broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce (optional, for extra flavor)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Crumbled oyster crackers or crusty bread (for serving)


Instructions

  1. Prepare the ingredients: Start by draining the oysters and setting aside their juice. Chop the onion and celery finely, and mince the garlic.
  2. Cook the vegetables: In a large pot, melt the unsalted butter over medium heat. Add the chopped onion and celery, sauté them until they soften, usually about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Make the broth: Pour in the chicken or seafood broth and reserved oyster juice, stirring to combine. Bring the mixture to a gentle simmer. Season with Worcestershire sauce, and add salt, pepper, and hot sauce if desired.
  4. Finish the stew: Once the broth simmers, reduce the heat to low, and whisk in the heavy cream. Gently fold in the drained oysters, allowing them to warm through for about 3-5 minutes.
  5. Serve: Ladle the oyster stew into bowls, garnish with chopped parsley, and serve with crumbled oyster crackers or crispy bread on the side.

Notes

For thicker stew, mix a tablespoon of flour with cold cream before adding. Adjust seasoning as needed.
