Ingredients
- – 3 tablespoons (45 ml) vegetable oil divided
- – 1/3 cup (30 g) breadcrumbs
- – 1/3 cup (30 g) grated Parmesan cheese
- – 3 cloves minced garlic
- – 3 cups (90 g) fresh spinach leaves torn or roughly chopped
- – 1/2 cup (15 g) fresh parsley leaves
- – salt as needed
- – 1/2 pound (225 g) oyster mushrooms separated
Instructions
- Set your oven to reach a temperature of 400°F.
- Divide the vegetable oil into three equal portions. Take one tablespoon of oil, mix it thoroughly with the breadcrumbs and grated Parmesan, and put this blend aside.
- In a skillet that can go in the oven, heat one tablespoon of oil along with the minced garlic over medium heat. Once the oil is hot, sauté the garlic for about a minute, then add the spinach and a pinch of salt. Stir the spinach until it wilts, which should take 1-2 minutes, then incorporate the parsley and move this mixture to a plate. Turn off the heat and add the remaining tablespoon of oil to the skillet.
- Once the oil has melted and covered the skillet’s surface, arrange the oyster mushrooms in a single layer. Place the spinach mixture on top of the mushrooms and evenly distribute the breadcrumb mixture over everything.
- Place in the oven and cook at 400°F for 10-15 minutes, until the mushrooms have softened and the breadcrumbs are golden brown. Serve hot, either as a side dish or on bread as crostini. Enjoy!
