Description
A simple and delicious oven-baked cod topped with a crunchy garlic herb crumb for a flavorful weeknight dinner.
Ingredients
- 4 cod fillets (about 6 oz each)
- 1 cup fresh breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 2 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon lemon zest
- Salt and black pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Pat the cod fillets dry with paper towels and season both sides with salt and black pepper. Place them on the prepared baking sheet.
- In a medium bowl, combine the breadcrumbs, parsley, dill, minced garlic, lemon zest, and olive oil. Mix until the crumbs are evenly coated.
- Spoon the garlic herb crumb mixture evenly over the top of each cod fillet, pressing gently to adhere.
- Bake for 18-20 minutes, or until the cod is opaque and flakes easily with a fork and the crumbs are golden brown.
- Serve immediately with lemon wedges on the side.
Notes
Experiment with different herbs and spices to customize the topping flavor. Serve with a light salad or roasted vegetables for a complete meal.
