Description

A simple and delicious oven-baked cod topped with a crunchy garlic herb crumb for a flavorful weeknight dinner.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 cup fresh breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon lemon zest
  • Salt and black pepper, to taste
  • Lemon wedges, for serving


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Pat the cod fillets dry with paper towels and season both sides with salt and black pepper. Place them on the prepared baking sheet.
  3. In a medium bowl, combine the breadcrumbs, parsley, dill, minced garlic, lemon zest, and olive oil. Mix until the crumbs are evenly coated.
  4. Spoon the garlic herb crumb mixture evenly over the top of each cod fillet, pressing gently to adhere.
  5. Bake for 18-20 minutes, or until the cod is opaque and flakes easily with a fork and the crumbs are golden brown.
  6. Serve immediately with lemon wedges on the side.
