A simple yet flavorful dish featuring juicy cod fillets topped with a crunchy garlic herb crumb mixture, perfect for any occasion.
Ingredients
- 4 cod fillets (about 6 oz each)
- 1 cup fresh breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 2 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon lemon zest
- Salt and black pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly.
- Pat the cod fillets dry with paper towels and season both sides generously with salt and black pepper.
- Place the seasoned cod fillets on the prepared baking sheet.
- In a medium bowl, combine breadcrumbs, parsley, dill, minced garlic, lemon zest, and olive oil. Mix until every crumb is coated evenly.
- Spoon the garlic herb crumb mixture over each cod fillet. Press gently to help it adhere to the surface.
- Bake in the preheated oven for 18–20 minutes until the fish becomes opaque and flakes easily with a fork while the crumbs turn golden brown.
- Serve immediately with lemon wedges on the side for an extra burst of brightness.

Try using panko breadcrumbs for an extra crunch and feel free to experiment with additional herbs like thyme or chives.
