Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Oil for frying
Instructions
- Mix the flour, salt, black pepper, garlic powder, and paprika in a bowl.
- Dredge each shrimp in this flour mixture, ensuring every inch gets covered.
- Dip the floured shrimp into beaten eggs, allowing excess to drip off.
- Coat each shrimp in a mixture of panko breadcrumbs and shredded coconut.
- Heat oil in a deep skillet over medium-high heat.
- Submerge coated shrimp in the hot oil, and fry in batches until golden brown, about 2-3 minutes per side.
- Remove shrimp and drain on paper towels to absorb excess oil.
- Serve hot with your favorite dipping sauce.
