Description

Enjoy the delightful crunch of coconut shrimp reminiscent of beachside dining, made simply with large shrimp, coconut, and panko breadcrumbs.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Oil for frying


Instructions

  1. Mix the flour, salt, black pepper, garlic powder, and paprika in a bowl.
  2. Dredge each shrimp in this flour mixture, ensuring every inch gets covered.
  3. Dip the floured shrimp into beaten eggs, allowing excess to drip off.
  4. Coat each shrimp in a mixture of panko breadcrumbs and shredded coconut.
  5. Heat oil in a deep skillet over medium-high heat.
  6. Submerge coated shrimp in the hot oil, and fry in batches until golden brown, about 2-3 minutes per side.
  7. Remove shrimp and drain on paper towels to absorb excess oil.
  8. Serve hot with your favorite dipping sauce.
