Ingredients

  • – 4 skinless salmon fillets
  • – 1 tsp salt – divided (5 ml)
  • – 1 tsp coarsely ground black pepper – divided (5 ml)
  • – 1 tsp sweet paprika (5 ml)
  • – 1 tsp garlic powder (5 ml)
  • – 1 tbsp olive oil (15 ml)
  • – 1 tsp beef butter (5 ml)
  • – 1 yellow onion – finely chopped
  • – 3 garlic cloves – minced
  • – 1 cup dry orzo pasta (240 g)
  • – 1 tsp dried thyme (5 ml)
  • – 3 cups low sodium beef broth (720 ml)
  • – 5 ounces baby spinach (140 g)
  • – juice from 1/2 lemon
  • – ½ cup grated cheese (50 g)
  • – freshly ground black pepper – for serving
  • – chili flakes – for serving


Instructions

  1. Prepare your ingredients before starting: Grate the cheese, chop the onion finely, and mince the garlic cloves. Use a paper towel to dry the salmon fillets. Sprinkle both sides with garlic powder, sweet paprika, and ½ teaspoon each of salt and pepper.
  2. Warm olive oil and beef butter in a large, nonstick skillet over medium-high heat. Place the salmon fillets in the skillet and cook for 3-4 minutes on each side until seared. Remove the salmon from the skillet and set it aside.
  3. Lower the heat to medium and add the garlic and onion to the skillet. Sauté for about 2 minutes until they are soft and fragrant. Mix in the thyme, along with the remaining salt and pepper. Add the orzo and cook for 1 minute until slightly toasted.
  4. Add the beef broth and bring the mixture to a boil. Lower the heat to medium-low to maintain a gentle simmer. Cook uncovered, stirring occasionally to prevent the orzo from sticking, until it is nearly al dente and most of the liquid has evaporated, which takes about 8 minutes.
  5. Introduce the spinach, stir, and let it cook until wilted, about 2 minutes. Mix in the lemon juice and grated cheese. If necessary, add a bit more broth. Taste and adjust the salt as needed.
  6. Place the salmon back into the skillet and let it heat through for 2-3 minutes.
  7. Finish with a sprinkle of freshly ground black pepper and chili flakes, then serve and enjoy!
