Ingredients
- 8 ounces (227 g) (225 grams) salmon fillets
- 8 ounces (227 g) (225 grams) fettuccine pasta
- 2 tablespoons olive oil (30 ml)
- 2 tablespoons vegetable oil (30 ml)
- 1 cup heavy cream (240 ml)
- 1/2 cup chicken broth (120 ml)
- 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
- 1 teaspoon (5 ml) garlic powder (5 grams)
- 1 teaspoon (5 ml) onion powder (5 grams)
- 1 teaspoon (5 ml) Italian seasoning (5 grams)
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1/4 teaspoon (1 ml) black pepper (1.25 grams)
- 1 cup (240 ml) baby spinach (30 grams)
- 1/2 cup (120 ml) sun-dried tomatoes, chopped (85 grams)
- 1 tablespoon lemon juice (15 ml)
Instructions
- Cook fettuccine pasta according to package instructions. Drain and set aside.
- Season salmon fillets with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium heat.
- Add salmon fillets to the skillet and cook for 4-5 minutes per side until cooked through.
- Remove salmon from the skillet and set aside.
- In the same skillet, add butter and let it melt over medium heat.
- Stir in garlic powder, onion powder, and Italian seasoning.
- Pour in chicken broth and heavy cream, stirring to combine.
- Add grated Parmesan cheese and stir until melted and smooth.
- Add sun-dried tomatoes to the sauce and stir to combine.
- Return cooked pasta to the skillet and toss to coat in the sauce.
- Add baby spinach and stir until wilted.
- Break salmon into chunks and add to the skillet.
- Gently stir to combine with pasta and sauce.
- Drizzle lemon juice over the pasta and mix well.
- Adjust seasoning with salt and pepper to taste.
- Serve immediately, garnished with additional Parmesan if desired.
