Ingredients

  • 8 ounces (227 g) (225 grams) salmon fillets
  • 8 ounces (227 g) (225 grams) fettuccine pasta
  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons vegetable oil (30 ml)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/2 cup (120 ml) grated Parmesan cheese (50 grams)
  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) onion powder (5 grams)
  • 1 teaspoon (5 ml) Italian seasoning (5 grams)
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (1.25 grams)
  • 1 cup (240 ml) baby spinach (30 grams)
  • 1/2 cup (120 ml) sun-dried tomatoes, chopped (85 grams)
  • 1 tablespoon lemon juice (15 ml)


Instructions

  1. Cook fettuccine pasta according to package instructions. Drain and set aside.
  2. Season salmon fillets with salt and black pepper on both sides.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add salmon fillets to the skillet and cook for 4-5 minutes per side until cooked through.
  5. Remove salmon from the skillet and set aside.
  6. In the same skillet, add butter and let it melt over medium heat.
  7. Stir in garlic powder, onion powder, and Italian seasoning.
  8. Pour in chicken broth and heavy cream, stirring to combine.
  9. Add grated Parmesan cheese and stir until melted and smooth.
  10. Add sun-dried tomatoes to the sauce and stir to combine.
  11. Return cooked pasta to the skillet and toss to coat in the sauce.
  12. Add baby spinach and stir until wilted.
  13. Break salmon into chunks and add to the skillet.
  14. Gently stir to combine with pasta and sauce.
  15. Drizzle lemon juice over the pasta and mix well.
  16. Adjust seasoning with salt and pepper to taste.
  17. Serve immediately, garnished with additional Parmesan if desired.
