Description
A flavorful one pot meal featuring succulent salmon, creamy orzo, and fresh vegetables, perfect for weeknight dinners.
Ingredients
- 6 salmon fillets (115 g each)
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 3 tablespoons olive oil
- 1 cup orzo pasta
- 2 cups cherry tomatoes, halved
- 2 cups fresh spinach
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, and place them in the pot. Cook for about 4-5 minutes on each side until golden and cooked through. Remove salmon and set aside.
- In the same pot, add cherry tomatoes and spinach, sauté for 3-4 minutes.
- Add the orzo and chicken broth to the pot, bring to a boil. Reduce heat and simmer for about 10-12 minutes until the orzo is cooked al dente.
- Stir in the heavy cream and Parmesan cheese, and mix well.
- Flake the salmon and gently fold it into the orzo mixture. Cook for another 2-3 minutes until everything is heated through.
- Garnish with fresh basil before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half or a plant-based cream. You can also replace spinach with kale for variety.
