A comforting and easy recipe for creamy salmon pasta prepared in one pot, perfect for busy weeknights or impressing guests.
Ingredients
- 8 oz pasta (fettuccine or penne)
- 2 salmon fillets
- 2 cups heavy cream
- 2 cloves garlic, minced
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the salmon fillets and cook for about 4-5 minutes on each side until cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper.
- Flake the cooked salmon and add it to the sauce along with the drained pasta. Toss everything together to coat.
- Serve garnished with fresh parsley.
Notes
For a lighter sauce, add a splash of lemon juice. Consider using fresh herbs like dill for added flavor.
