Ingredients

  • 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 4 cloves garlic, minced
  • 1 cup (240 ml) beef broth (240 milliliters)
  • 1 cup (240 ml) coconut milk (240 milliliters)
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1/2 teaspoon (3 ml) black pepper (2 grams)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • 1 tablespoon (15 ml) chopped fresh parsley (15 grams)
  • 1/4 cup (60 ml) grated mozzarella cheese (25 grams)
  • 1 tablespoon (15 ml) cornstarch mixed with 2 tablespoons (30 ml) water (15 grams cornstarch mixed with 30 milliliters water)


Instructions

  1. Heat 1 tablespoon of olive oil in a large pan over medium-high heat.
  2. Add the shrimp to the pan and cook for 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the pan and set aside.
  3. In the same pan, add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and coconut milk, stirring to combine.
  5. Add salt and black pepper to the pan, and bring the mixture to a simmer.
  6. Stir in the lemon juice and chopped parsley.
  7. Gradually add the cornstarch mixture to the pan, stirring constantly, until the sauce thickens.
  8. Reduce the heat to low and return the cooked shrimp to the pan.
  9. Sprinkle the grated Parmesan cheese over the shrimp and sauce.
  10. Stir gently to combine the cheese into the sauce and ensure the shrimp are well coated.
  11. Cook for an additional 2-3 minutes until the shrimp are heated through.
  12. Remove from heat and serve immediately.
