Ingredients
- 1 pound (450g) large shrimp, peeled and deveined
- 2 tablespoons (30ml) vegetable oil
- 4 cloves garlic, minced
- 1 cup (240ml) coconut milk
- 1 tablespoon (15ml) lemon juice
- 1 teaspoon (5 ml) lemon zest
- 1 teaspoon (5 ml) paprika
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon (15 ml) fresh parsley, chopped
Instructions
- Heat 1 tablespoon of olive oil in a large pan over medium heat.
- Add the shrimp to the pan and season with salt and black pepper.
- Cook the shrimp for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from the pan and set aside.
- Add the remaining tablespoon of olive oil to the same pan.
- Sauté the minced garlic in the oil for about 1 minute until fragrant.
- Pour in the coconut milk and stir to combine with the garlic.
- Add the lemon juice, lemon zest, and paprika to the pan.
- Stir well and let the mixture simmer for 2-3 minutes.
- Return the shrimp to the pan and coat them in the sauce.
- Cook for an additional 2 minutes to heat the shrimp through.
- Taste and adjust the seasoning with more salt and black pepper if needed.
- Sprinkle the chopped fresh parsley over the shrimp before serving.
