Ingredients

  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons (30ml) vegetable oil
  • 4 cloves garlic, minced
  • 1 cup (240ml) coconut milk
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon (5 ml) lemon zest
  • 1 teaspoon (5 ml) paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon (15 ml) fresh parsley, chopped


Instructions

  1. Heat 1 tablespoon of olive oil in a large pan over medium heat.
  2. Add the shrimp to the pan and season with salt and black pepper.
  3. Cook the shrimp for 2-3 minutes on each side until pink and opaque.
  4. Remove the shrimp from the pan and set aside.
  5. Add the remaining tablespoon of olive oil to the same pan.
  6. Sauté the minced garlic in the oil for about 1 minute until fragrant.
  7. Pour in the coconut milk and stir to combine with the garlic.
  8. Add the lemon juice, lemon zest, and paprika to the pan.

  12. Taste and adjust the seasoning with more salt and black pepper if needed.
  13. Sprinkle the chopped fresh parsley over the shrimp before serving.
