Ingredients

  • 1 pound shrimp, peeled and deveined (450 g)
  • 2 tablespoons vegetable oil (30 ml)
  • 1 medium onion, finely chopped
  • 6 cloves garlic, minced
  • 1 cup coconut milk (240 ml)
  • 1 tablespoon lemon juice (15 ml)
  • 1 teaspoon (5 ml) paprika
  • 1 teaspoon (5 ml) dried Italian herbs
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons (30 ml) chopped fresh parsley


Instructions

  1. Heat 1 tablespoon of olive oil in a large pan over medium heat.
  2. Add shrimp to the pan and season with salt and black pepper.
  3. Cook shrimp for 2-3 minutes on each side until pink and opaque.
  4. Remove shrimp from the pan and set aside.
  5. In the same pan, add the remaining 1 tablespoon of olive oil.
  6. Sauté the chopped onion until it becomes translucent, about 3-4 minutes.
  7. Add minced garlic to the pan and cook for another 1-2 minutes.
  8. Pour in the coconut milk and stir to combine with the onion and garlic.
  9. Add lemon juice, paprika, and dried Italian herbs to the sauce.
  10. Season the sauce with salt and black pepper to taste.
  11. Bring the mixture to a gentle simmer, allowing it to thicken slightly.
  12. Return the shrimp to the pan, tossing them in the creamy sauce.
  13. Cook for an additional 2-3 minutes to heat through.
  14. Sprinkle chopped fresh parsley over the shrimp before serving.
  15. Serve immediately and enjoy.
