Ingredients
- 1 pound shrimp, peeled and deveined (450 g)
- 2 tablespoons vegetable oil (30 ml)
- 1 medium onion, finely chopped
- 6 cloves garlic, minced
- 1 cup coconut milk (240 ml)
- 1 tablespoon lemon juice (15 ml)
- 1 teaspoon (5 ml) paprika
- 1 teaspoon (5 ml) dried Italian herbs
- Salt to taste
- Black pepper to taste
- 2 tablespoons (30 ml) chopped fresh parsley
Instructions
- Heat 1 tablespoon of olive oil in a large pan over medium heat.
- Add shrimp to the pan and season with salt and black pepper.
- Cook shrimp for 2-3 minutes on each side until pink and opaque.
- Remove shrimp from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon of olive oil.
- Sauté the chopped onion until it becomes translucent, about 3-4 minutes.
- Add minced garlic to the pan and cook for another 1-2 minutes.
- Pour in the coconut milk and stir to combine with the onion and garlic.
- Add lemon juice, paprika, and dried Italian herbs to the sauce.
- Season the sauce with salt and black pepper to taste.
- Bring the mixture to a gentle simmer, allowing it to thicken slightly.
- Return the shrimp to the pan, tossing them in the creamy sauce.
- Cook for an additional 2-3 minutes to heat through.
- Sprinkle chopped fresh parsley over the shrimp before serving.
- Serve immediately and enjoy.
